Vinnige Mielie- en Aartappel koekies

Hierdie heerlike groente “patties” kan vir ontbyt, middag- en aandete bedien word. Vir my kinders was dit ‘n stapel elke week vir hul kosblikke en natuurlik padkos saam met Ouma Hantie se Knoffel room in die Boerekos met ‘n Twist kookboek.

Vir ‘n heerlike ete bak ek hierdie Vinnige Mielie en Aartappel koekies en stapel dit op mekaar met gebraaide sampioene en uie, spek, geposjeerde eier met ‘n lagie avokadopeer… die opsies is legio.

Vinnige Mielie- en Aartappel koekie wenke

Bestanddele vir Vinnige Mielie en Aartappel koekies

  • 70 g (½ k) koekmeel
  • ¼ t bakpoeier
  • ½ t knoffel sout
  • ¼ t gerookte paprika
  • ¼ t wit peper of swart peper na gelang van keuse
  • 1 k gevriesde of geblikte mielie pitte, dreineer / ontdooi
  • ½ k fyn gerasperde aartappel, in sif gespoel om stysel uit te kry…droog gedruk in lappie
  • 2 t fyn gekapte spriet uie of gewone ui
  • ½ k cheddar, gerasper
  • 1 eier
  • 1 e water (opsioneel)

Metode vir Vinnige Mielie en Aartappel koekies

  • Meng al die bestanddele saam. Rus die beslag vir 10 minute. Indien die beslag na 10 minute dalk nie wil saam druk voeg so 1 e water by en meng goed deur.
  • Neem 4 e van die mengsel en vorm plat skywe soos patties of druk in eier ringetjies baie stewig vas. Die grootte van die patties hang af van jou keuse en hoekom moet dit rond wees? Lekker speel!
  • Jy het paar opsies vir die gaarmaak van hierdie patties. Ek verkies om die “patties” eers te vries vir 10 minute en dan te pan braai in vlak olie. Of jy direk op die warm plaat begin. Ek vind dat mens netjieser patties kry en draai ook makliker om.
  • Braai dan die patties in vlakvet vir 3 minute aan beidekante of totdat dit bruin en krakerig is.
