Karamel sjokolade brosbrood koekies (Gluten vry)

‘n Heerlike Sjokolade-karamel brosbrood koekie wat vinnig en ook gluten-vry berei kan word. Onlangs het ek in die winkel ‘n gesprek van ‘n mamma en haar tiener dogter gevolg by die lekkergoed rak. Die mamma is ademant dat die dogter vir vel doeleindes eerder gluten-vry moet eet. So werk hulle deur die bestanddele lyste van die verskillende soorte sjokolades en almal het iewers ‘n spoor van gluten. Selfs die duur Belgiese sjokolades bevat gluten. Ek gee hul toe die raad om eerder na Couverture egte bakkers sjokolade te soek want uit ervaring met Spesiale diete, weet ek dat dit wel gluten vry is. Ek hoop jul geniet hierdie resep met of sonder sjokolade wat gluten bevat.

1 k amandel of enige ander soort neute meel
1 e klapper meel
3 e heuning
2 e klapper olie
1 t vanielje geursel

Meng al die bestanddele saam en druk in mini kolwyntjie pannetjies wat vooraf gesmeer is met pansmeer uit my Boerekos met ‘n Twist kook boek of plaas kolwyntjie papiertjies in die holtes.

Verdeel die krummel mengsel tussen die holtes en bak dan in voor verhitte oond van 180 C vir 10-12 minute.

Die Karamel vulsel
1/3 k neute of grondbone botter van keuse, ons verkies pekan botter
3 e heuning *heuning kan met enige ander stroop vervang word vir bye allergiee
1 e klapper olie
1/2 blikkie karamel kondensmelk

Meng alles saam en skep op die afgekoelde koekies.

1 k choc chips
1 e klapper olie

Smelt die sjokolade in die mikrogolf in 15 sekonde intervalle vir 60 sekondes, voeg die klapper olie by en roer en smelt.

Skep die sjokolade op die karamel en vries vir ‘n uur en haal uit. Hou in die yskas.

*Die karamel kondensmelk kan uit gelaat word en geen verdere aanpassings nodig.
