Gerookte Varknek rol met roerbraai rooikool

Vark nek broodjies is vir my altyd heerlik want dit is soeterig met ‘n goeie balans van sout en daarmee saam niks so lekker soos ouma se heerlike Kondensmelk mosterd sous en kool met uie geroer-braai. Wanneer ons gaan kamp koop ek by my plaaslike slaghuis hul gerookte vark nek rolle aan en pak vir my ‘n sakkie met al die bestanddele vir roosterkoek. Vir die roosterkoek sit ek net die sakkie met kitsgis apart in.

Die geheim van die Vark nek rol is die stadig en lank gaarmaak daarvan oor die kole of op die kant van die vuur.

1 vark nek rol, berook
1 e gerookte paprika
4 e heuning
2 e soja sous
2 e olie
1 blikkie appelsap of cider soos Hunters ens

Meng die bestanddele saam en vryf oor die nek. Giet die sap of drank oor en plaas die nek in ‘n platboom pot en bedek die inhoud en pot met foelie en plaas dan die deksel op. Maak gaar vir 4 ure oor baie matige hitte totdat die vleis uit mekaar val.

Stoomdruk vir 2 ure, Slow cooker vir 6 ure hoog, oond bak 150C vir 6 ure.

Daarna rafel die vleis en meng met die sous wat gevorm het. Laat afkoel.

Kool-roerbraai
½ kop rooi kool fyn gesnipper
2 uie fyn gesnipper
4 e botter
Sout en peper na smaak
Twee knippies neutmuskaat

Roerbraai die kool, uie en botter. Sprinkel sout, neutmuskaat en peper na smaak. Laat afkoel.

Pak dan die broodjie soos jy daarvan hou of maak ‘n Roosterkoek!
