Hierdie plaatkoekies het elke kinderhandjie in my famielie deurstaan, as jy 6 jaar oud was, het jy jou eie plaatkoekies gebak! My ma het maar altyd handjie bygesit, maar ons het elke plaatkoekie gebak en versier soos ons wou.

Wenk: Hierdie resep verdubbel baie goed. Vervang die koekmeel vir gluten allergië met Natures Choice se Glutenfree flour, gevind by alle gesondheidsrakke by meeste kettingwinkels.

140 g (1 k) koekmeel
10 ml (2 t) bakpoeier
1 ml (knippie) koeksoda
1 ml (knippie) sout
30 ml (2 e) witsuiker
200 ml melk
15 ml (1 e) olie
1 jumbo of groot eier

Sif die koekmeel, bakpoeier, koeksoda en sout saam. Roer die suiker by die gesifte meel mengsel.

Klits eier, melk en olie saam en meng met die droë bestanddele. Klits die mengsel tot glad en laat rus vir 30 – 40 minute sodat die stysel korrels kan uitswel en jou beslag nog dikker kan word.

Voorverhit ‘n kleefwerende pan en drup lepels vol deeg op die warm pan. Sodra daar borreltjies op die bokant verskyn en die koekie se kante verdubbel het in volume, kan jy die koekie draai.

Vir variasie spuit ek koekie drukkers met kleefwerende kos sproei en skep dan van die beslag in die drukkers wat in die warm pan geplaas word. Sodra die bokant effens droog gebak en borreltjies op het, lig die koekie drukker versigtig op om dit te verwyder en draai die koekie om. Hier is die koekie drukker dan nie meer nodig want die koekie sal nou sy vorm behou.

Bedien warm.
