Wafer cones and tulles are very easy and economical to make. Having these items made in advance and stored correctly will ensure your dessert menu with ample supply of ideas. From fillings like icecream, cheesecakes with a twist, home made marshmellow and so much more!

140 g (1 k) cakeflour
5 ml (1 tsp) baking powder
30 ml (2 tbsp) cocoa for chocolate cones OR corn starch for vanilla cones

Mix together and set aside.

3 large eggs
150 g (3/4 cup) white sugar
15 ml (1tbsp) vanilla essence

Beat the eggs and sugar until light and frothy, add the vanilla and beat again till frothy and light

1/2 cup melted and cooled butter (butter must be runny)

Combine the melted butter with the egg mixture and whip again. Lastly add the flour mixture and beat until well incorporated.

Pre heat the baking tool over moderate heat. I bake with a regular fire iron (kniepertjes iyzer), working directly on gas or aga. This recipe is also suitable for electrical waffle cone makers too. With hand held wafer irons, please flip the tool halfway of the cooking time for an even bake.

10 ml (2 tsp) batter will yield a small circle: 1 min bake
15 ml (1 tbsp) batter will yield a medium circle: 1 ½ min bake
25 ml (1 ½ tbsp) will yield an extra large circle: 2 min bake

Add the batter to the centre of the iron. If your iron is as old as mine, please add some nonstick cooking spray before baking. It will work at the same principle as for pancakes…if the heat and grease is perfect the waffle will come loose on its own.

Bake until the waffle is loose from the grid. Remove from the waffle grid and set onto a towel. Add next batter to the waffle iron.

Cone shaping: Immediately fold the hot wafer over the cone. Ensure to fold the bottom edge of the cone with the first turn inwards to prevent ingredients to seep through. Or alternatively, coat the inside with melted chocolate to waterproof the inside. Hold in place by hand until set. Then keep upright in a tall glass and before stacking the cones, add pieces of parchment paper in between and ensure the cones are completely cooled.

Cigar shaping: shape while hot over a broomstick sized dowl

Tulles: shape while hot over an upside down bowl of choice.

Taco halves: while hot shape over a hanging broom stick or narrow rolling pin.

Medallions: while hot cut into triangles to be used in parfaits

Shelf life: 3 months in the cupboard, freezer 6 months
