Macarons are one of those pretty little things you MUST have in stock at all times for decorating sweat treat boxes, platters, cakes, desserts and part of a beautiful English high tea!

This will be a course focusing on the following:
1. Hot and cold meringue for making macarons, basically learning two ways of making macarons.
2. Fillings
3. Grinding and milling your own nut flours, not just using almonds but also pecans!
4. Deep dive into quality of ingredients and where to shop.
5. Colouring options and flavourings
6. Storage and packaging
7. Piping and baking techniques. How to bake in gas ovens, I only bake in my studio with gas. I will convince you gas ovens can bake perfect even sensitive things like macarons!
