Description

Petit fours are the little show stoppers of all English high teas. A high tea is not a high tea without a classically prepared Petit four. I had the privilege to attend a Petit four class in San Francisco when we lived abroad and fell in love with these tiny beauties.

A classic petit four must be baked with a proper cake base to handle the layers of fondant and royal icing and other decorations.

During this session I will demonstrate the basic cake and you will be handed pre baked cakes that had some time to set overnight for very precise and neat cuts.

Pictures provided are samples of what students made themselves for the first time!

This course focus on:
1. Correct choice of cake base, pre prepping the cake
2. Simple syrups
3. Fillings: jams and cream fillings
4. Coverage by means of almond paste and homemade fondant and an extra bonus mirror glaze with a twist.
5. Decorating with royal icing and fondant flowers.
