Tuna en Mieliekoekies

Hierdie is ‘n lekker vingerhappie vir kuier kos. Verder geniet my kinders dit as ek hierdie in hul kospakkies vir skool sit. Soms as ek nie tuna in die huis het, gebruik ek ham, spek, pilchards, polonie, rooi worsies. Die happies is krakerig en bros en word bedien met ‘n sousie. Sousie opsies wat heerlik werk is ouma Hantie se Knoffelroom en Soetrissie pynappel sous van Ancoise Venter op ons blog. Lekker eet!

Resep
200g Mieliepitte, vars gekook of geblik
70g Koekmeel
2 Eiers, geklits
300g Tuna vleis, gedreineer
1 hand vol groen blare soos baba spinasie/ kale/ seldery blare (geur is jou keuse), gekap
60ml Olyf olie
Sout en peper na smaak
Suurlemoen wiggies

Metode:
1. Voeg die mielies, koekmeel en eiers saam. Meng deeglik totdat die mengsel glad is. Vou die res van die bestanddele in.

2. Voor verhit ‘n braai pan. Voeg die olie in die warm pan. Skep ongeveer ‘n groot roomys skeppie van ongeveel 90ml in die pan en braai aan beide kante.

3. Plaas op dreineer papier en bedien.

200g Mealie kernels, cooked or tinned
70g Cakeflour
2 Eggs, whisked
300g Tuna chunks, drained
1 hand full of baby spinach/ kale/ celery leafs (your choice), choped
60ml Olive oil
Salt ‘n Pepper to taste
Lemon wedges for serving1. Mix the mealie kernels, cake flour and eggs together until smooth. Add the rest of the ingredients and mix again.

2. Pre heat a skillet and add the oil. Measure with a large ice cream scoop of 90ml and fry the fritters until golden brown on both sides.

3. Drain on kitchen paper and serve.
